SCOTCH EGGS

If you haven’t tried Scotch Eggs you’re in for a real treat!


This delicious dish of boiled eggs wrapped in herbed sausage meat makes a wonderful snack on its own, or as lunch served with salad and mustard on the side.


The right eggs are an important part of the recipe so get yourself some QL D'Fresh Eggs, which are healthy and packed with protein to keep you fuller for longer.

INGREDIENTS

QL D'Fresh Eggs
250g
sausage meat
1 sprig
fresh thyme, chopped
1 tbsp
parsley, finely chopped
1 tbsp
chive, finely chopped
100g
plain flour, lightly seasoned with salt and ground black pepper

QL D'Fresh Egg, beaten
150g
panko breadcrumbs
1L
oil (for frying)
Salt and crushed black pepper, to taste

METHOD

1. Soak QL D'Fresh Eggs in iced cold water for about 15minutes.


2. Boil the eggs in boiling water for 8mins and then place them back into a bowl of iced water. Remove shells from the eggs.


3. Remove sausage meat from casing, then add in freshly chopped herbs and season with salt and pepper, mixing well.


4. Divide the meat mixture into four portions, flatten the meat and wrap each egg with a portion of the meat mixture. Chill in the fridge for 15 minutes.

5. Dip each sausage meat-coated egg into the flour, shaking off any excess, then into the beaten egg, and finally, coat with the breadcrumbs.

6. Heat the oil in a deep heavy-bottomed pan. Carefully place each Scotch egg into the hot oil and deep-fry for 6 - 8 minutes, until golden and crisp and the sausage meat is completely cooked.
