How can I tell if the egg is fresh?

A fresh egg has a firm yolk and thick white that surrounds it. A stale egg has a flat yolk and watery white.

To test freshness, place the egg in water—if it sinks, it’s fresh; if it floats, it’s stale. This happens because the air cell inside grows as the egg ages. Scientifically, freshness can also be measured using the ‘Haugh Unit,’ which assesses the egg white (albumin).

To maintain freshness, eggs should be stored in the fridge right after purchase.

Eggs should be stored in a cool and dry place. To maintain its freshness, eggs should be stored in the fridge right after purchase.

Why aren’t eggs kept in a fridge in supermarkets?

To maintain freshness and safety, eggs should be stored below 20°C. Since most supermarkets are kept under this temperature, refrigeration isn’t needed in stores. This also avoids temperature swings, like moving eggs from a fridge to a hot car.

How long can I store the eggs at room temperature? How long can I store them in the fridge?

Eggs stay fresh for up to 14 days at room temperature and 30 days in the fridge. For best freshness, refrigerate eggs right after purchase.

Can eggs be frozen?

Eggs in their shells should not be frozen.

Sometimes, I see a red spot in the egg yolk. What is it? Is it safe?

This is likely a blood spot from a ruptured blood vessel in the hen’s ovary. It can appear in eggs from young or old hens and is safe to eat.

What is the brown spot I sometimes see in the yolk?

This is likely to be a ‘meat spot’, which is caused by tiny pieces of reproductive tissue being caught in the production of an egg. It is rare and the egg is safe to eat.

When I prepare hard-boiled eggs, I sometimes see egg white on the outer shell. Why?

Placing a cold egg in boiling water can crack the shell. Let eggs sit at room temperature for 30 minutes before cooking.

Why is it sometimes difficult to remove the eggshell of hard-boiled eggs?

If it is difficult to remove the shell of a hard-boiled egg, it means the egg is freshly laid.

How can I avoid a dark / green ring around the yolk of hard-boiled eggs?

Once fully boiled, remove the eggs from the water immediately and immerse them in cold water to cool them as quickly as possible before shelling.

How can I tell if my eggs have spoiled?

Use eggs quickly to limit bacterial growth. Properly stored eggs rarely spoil but may age and change in appearance without losing nutritional value. Always refrigerate eggs right after purchase, use them before the expiry date, and discard any with discolored or damaged shells. To test freshness, place an egg in water. Why are some eggshells brown and some white? Is there any nutritional difference?

Eggshell color depends on the hen's breed, with white hens laying white eggs and brown hens laying brown ones. While white eggs were once popular in Malaysia, nearly all eggs now have brown shells due to consumer preference. There's no nutritional difference between the two.

Eating eggs has little effect on blood cholesterol levels, as most cholesterol is produced by the body and not directly from food. It's safe to eat eggs daily, especially when intake of other cholesterol- and fat-rich foods is limited.

Should I restrict the number of eggs I eat?

Most people don't need to restrict eggs, as they're a good source of high-quality protein, vitamins, and minerals. While some worry about cholesterol, recent studies show that excess saturated fat, not dietary cholesterol, is more harmful, and eggs are low in saturated fat.

Where is cholesterol found, in egg yolk or egg white? Is it HDL or LDL cholesterol?

Cholesterol is found in egg yolk. HDL (good cholesterol) transports cholesterol to the liver for removal, while LDL (bad cholesterol) carries it to other body parts. Eggs don’t have "good" or "bad" cholesterol.

What are the main ingredients in feed for hens?

Can hens lay eggs without their male?

Hens lay eggs with or without a male. In breeding operations, hens and males are kept together to produce fertilized eggs for hatching. In commercial egg operations, only hens are raised to produce eggs.

When will a hen start to lay eggs?

A hen will start to lay eggs between 16–18 weeks of age. In commercial egg layer operations, we consider 18 weeks of age as the first week of egg laying for hens.

How many eggs can a hen lay a day?

Once a day. Generally, a hen will lay one egg every 24–26 hours.

Hisex is the most popular breed with about 50% market share. Other breeds are Lohmann, H&N, ISA, Novogen.
